I had that happen with a cat...he just stopped eating and drinking, then dehydrated. I had him at the vets with bloodtests and IV fluids. Still wasn't eating or drinking after 2 days at the vets. I brought him home bewildered, and suddenly he was fine. You don't say exactly what Chunk's symptoms are but reading between the lines it sounds as though he is off his food? Rocky had same problem; bloodwork didn't give definitive diagnosis, but ultrasound and needle biopsy showed idiopathic hepatic lipidosis; we treated him for this but he crashed and despite emergency care we lost him. A necropsy showed that he had hypertrophic cardiomyopathy (HCM), which wasn't diagnosed by the regular vet, the internist or the emergency vet. So you may want to consider possible HL (common in stressed fat declawed cats) and/or HCM.
